Almond nori rolls

1/2 cup almonds
1 cup cashews
1 inch grated ginger
1 clove garlic
2 carrots
2 green onions
1/4 cup raisins
2 sheets nori
2 cups spinach leaves
2 tablespoons extra virgin olive oil
1 tablespoon lemon juice
pinch of salt
just enough nama shoyu
just enough wasabi

1. Grind almonds and cashews into a powder and set aside
2. Process ginger, garlic, carrots, onion, raisins, and salt into small pieces
3. Add oil, lemon juice, powdered almonds and cashews, and process until well combined
4. Lay nori sheets on a flat surface and spread spinach leaves along bottom half
5. Spread about 1/4 cup filling on the spinach, along edge closest to you
6. Roll up nori sheet and slice into 6 pieces using a sharp knife
7. Service with soy sause and wasabi if you like
